Steam Cooking Recipes with the Thermomix: Healthy Cooking Made Easy

If you want to really get the most out of your Thermomix, you can't avoid the topic of steam cooking. Thermomix steam cooking recipes are not only quick to prepare, they also preserve vitamins and nutrients in a way that traditional cooking in a pot simply cannot achieve. In this article, we'll show you how steam cooking works, which recipes have proven particularly effective, and how to get even more out of your appliance with the right accessories.

What's Behind Steam Cooking?

In steam cooking, the food doesn't cook in water, but above the water – through rising hot steam. This makes a crucial difference: water-soluble vitamins like vitamin C or B vitamins are largely preserved because they don't transfer into the cooking water. The color, structure and natural flavor of the vegetables are also better preserved.

The Thermomix is perfectly suited for this cooking method. The Varoma attachment – the characteristic steam cooking dish – sits directly on the mixing bowl. The Thermomix heats the water in it to exactly the set temperature, the steam rises and cooks the food evenly and gently. And while steaming takes place on top, a sauce, dip or grain can be cooked simultaneously in the mixing bowl. True multitasking in the kitchen.

Thermomix Steam Cooking Recipes: Three Ideas for Everyday

1. Steamed Salmon Fillet with Broccoli and Lemon Butter

A classic among steam cooking Thermomix recipes – and for good reason. Salmon and broccoli complement each other perfectly in taste, and both benefit from gentle steam.

Ingredients (2 servings):

  • 2 salmon fillets (approx. 150 g each)
  • 300 g broccoli, divided into florets
  • Salt, pepper, a little lemon juice
  • 750 ml water
  • 30 g butter, 1 tsp lemon zest, chives for finishing

Preparation:

  1. Add water to the mixing bowl.
  2. Season salmon fillets with salt and pepper, place in the Varoma container. Broccoli next to it or in the Varoma tray.
  3. Place Varoma on top, cook for 20 min. / Varoma / speed 1.
  4. Meanwhile, melt butter (5 min. / 80 °C / speed 2), stir in lemon zest.
  5. Arrange everything together, sprinkle chives on top – done.

Why it works: The salmon stays juicy, the broccoli retains its bright green color and a slight bite. No drying out, no mushiness.

2. Steamed Vegetable Medley with Hummus

This recipe is wonderful as a light lunch or as a side dish. It's one of the most versatile Thermomix steam cooking recipes because you can freely assemble the vegetables according to season and preference.

Ingredients (2–3 servings):

  • 200 g carrots, sliced
  • 150 g zucchini, diced
  • 150 g cauliflower, in small florets
  • 1 red bell pepper, roughly diced
  • Salt, turmeric, cumin
  • Ready-made hummus for serving (or prepared in the mixing bowl yourself)

Preparation:

  1. Season vegetables and place in the Varoma container.
  2. Add 500 ml water to the mixing bowl, place Varoma on top.
  3. Cook for 22 min. / Varoma / speed 1.
  4. Serve with hummus – either from the refrigerator or freshly prepared in the mixing bowl while the vegetables are cooking.

Tip: If you like, cook couscous or quinoa as a side dish in the mixing bowl at the same time by placing them in a cooking insert in the mixing bowl.

3. Steamed Chicken Breast Strips with Rice and Ginger-Soy Sauce

A complete, healthy main course – and one of the most popular steam cooking Thermomix recipes when it comes to real everyday testing.

Ingredients (2 servings):

  • 2 chicken breast fillets, cut into strips
  • 1 tsp sesame oil, salt, pepper, a little fresh ginger grated
  • 300 g basmati rice
  • 700 ml water
  • For the sauce: 2 tbsp soy sauce, 1 tsp honey, 1 tsp rice vinegar, ½ tsp ginger grated

Preparation:

  1. Marinate chicken strips and place in the Varoma.
  2. Add rice and water to the mixing bowl, place Varoma on top.
  3. Cook for 25 min. / Varoma / speed 1.
  4. Briefly stir sauce ingredients and pour over the finished dish.

Why this recipe is a winner: Rice and protein in one pass – no draining, no straining, no second pot.
