1. Activate the yeast: warm 250 ml lukewarm water and 1 tsp sugar with 1 packet of dry yeast for 2 min. / 37°C / speed 1 in the Thermomix.

2. Add ingredients: 500 g wheat flour (Type 550) and 1 tsp salt.

3. Knead: run for 3–4 min. on kneading speed until the dough is nicely smooth.

4. Remove the dough: use the mixcover wooden spatula to get the dough cleanly out of the mixing bowl.

5. Let it rise: place in a floured bowl, cover, and leave in a warm spot for 45–60 minutes. In summer, the windowsill is enough for us.

6. Shape and bake: shape the dough into a loaf, place it on the reusable baking film, and bake at 200°C top/bottom heat for about 30–35 minutes.
